i had the best dinner last night. i have a horrible cold right now, and have been feeling so gross lately. (so sad to be sick on the 4th of july!) i thought i wasn’t in the mood for anything last night, but somehow i managed to make a delicious meal that i never wanted to end! soup is always good for the soul, isn’t it?
in the bowl on the left is mashed cauliflower (steamed cf blended with a little bit of plain unsweetened soy milk, sea salt, and black pepper) with cinnamon abu and picked ginger slices. i made this abu with unsweetened almond milk, and it was so good! i thought i didn’t like almond milk, but i guess that’s only when i drink it on its own. in smoothies and other things, it’s really good! this was my first time making mashed cauliflower. don’t ask why, because i truly don’t know. how have i lived 18 years without it?! and with abu and ginger…mmmm, mmmm, mmmm. no words.
i feel like my meals always looks so huge in pictures. when i’m actually eating, my portions seem pretty normal to me. and hey, even if my meals are kind of big sometimes, a vegan’s gotta eat! anyway, in the bowl on the left is a fantastic and super easy-to-make soup. the broth was simply vegetable broth with a little bit of soy sauce, some cayenne pepper, and a dash or two of sea salt. resting in this lovely broth are buckwheat soba noodles and arame! oh, how i love arame. katie, you like?
strawberries have been so beautiful lately. i love when they’re really dark red and juicy. time to backtrack to yesterday’s breakfast.
1/2 cup oats, 1 cup water, raisins, chopped strawberries, 1 scoop peanut butter, some more chopped strawbs on top for prettiness, a glass of rice milk
as for this celebratory july morning, i made a special bowl of oatmeal. very, very special. it’s definitely going down as one of the yummiest and prettiest bowls of oatmeal i’ve ever had! and i have high oatmeal standards, so you know that this bowl must have been really amazing. take a look at…
RED, WHITE, AND BLUE OATMEAL
1/2 cup oats, 1/2 cup unsweetened almond milk, 1/2 cup water, banana slices, fresh blueberries, a little bit of stevia, ground ginger root, special strawberry sauce, 1 spoonful cacao bliss
i guess it was actually pink, white, and blue…but the effort was there! this strawberry sauce was the simplest thing to make. i just blended a few strawberries with a little bit of unsweetened almond milk and a few sprinkles of stevia. so healthy (because the whole fruit goes into the sauce, not just the juice) and so delicious! you can’t see the all the blueberries and banana slices in the photo, since the strawberry sauce spread all over the place like it owned the bowl. there’s one little bloob peaking out there in the middle, though! how cute. when adding sliced banana to oatmeal, i highly suggest cooking it in the oatmeal instead of adding it in at the end. when banana cooks, it gets that heavenly bananas foster-y flavor. yum. today’s breakfast was absolute perfection. happy, happy, HAPPY birthday america! and thank you for inspiring this red, white, and blue oatmeal. i really do live in the land of the oats, don’t i?
