graduation shmaduation

howdy doooo.

so last night i wasn’t exactly sure what i felt like for dinner. at the most, i knew i felt like a hemp bagel. with no abundance of ideas flowing through my mind, i decided to just throw together a few things that i thought would mesh well. i blended some black beans with a little ketchup, black pepper, and sea salt (a yummy and simple combination that i find myself whipping up often.) this is what i put on the toasted hemp bagel, along with a swirl of plain/unsweetened soy yogurt for a sort of sour cream effect (i felt adventurous for putting something i usually eat with sweet things on top of black beans!) and a few chopped sun dried tomatoes. i also had steamed broccoli, which i topped with vegan ranch, vegan parm, black pepper, and crushed red pepper. overall this was a pretty decent dinner!

breakfast this morning was of course delightful. oatmeal again, obviously. i made chocolaty oats again, but i went back to using only 1 teaspoon cocoa powder, since i also added in cinnamon and nutmeg this time. i didn’t want the chocolate flavor to mask the spices. but when only adding cocoa, 1 1/2 teaspoons is for sure the way to go!

1/2 cup oats, 1 cup water, 1 teaspoon cocoa powder, 1/2 teaspoon vanilla extract, cinnamon, nutmeg, 1 packet stevia, 1 chopped nectarine, 1 chopped kiwi, some shredded coconut, 1 spoonful cashew butter

after the first few bites of this oatmeal, i wasn’t sure how much i liked it. but as i kept taking bites of the sweet nectarine and the tangy kiwi, it just got better and better! and of course cashew butter is never a disappointment. by the end of the bowl i was sad that it was all gone! to say a little something about the shredded coconut, it gives the oatmeal a great texture! i can’t really taste very much of the coconut flavor when the shreds are in my oats, but the chewiness is nice. and a little bit of shredded coconut goes a long way! it never looks like a lot when sprinkling it on, but when it comes down to it, you really don’t need very much.

GUESS WHAT?

i bought two larabars this morning of flavors i’ve never tried! key lime pie and cashew cookie. yes, it’s true, i’ve never tried cashew cookie! but i’m super excited to! i’m going to my stepbrother’s graduation this evening, so i won’t have a dinner picture for tonight. and i don’t have a lunch picture from today either because, well, i didn’t take one! ugh, i have a lot of boredom and waiting around in store for me tonight. i wonder if it would be rude to listen to music or read during his graduation. probably. maybe it won’t be too dreadful…only i’m pretty sure it will be! i hope the rest of your thursday is more wonderful than mine will probably be.

see you tomorrow! well, not literally see. i don’t think i need to go on about this, haha. i really am the constant rambler.

    Hemp bagel…. never tried one! But I must say that your dinner looks amazing. And so does your breakfast. Wtf? Why do your breakfasts always look so freakin’ amazing? If you are coming over to hang with me and Fran, you’re bringing your oatmeal!! 😀

    oh man, I went to my sister’s convocation today and definitely should have brought a book or something else to entertain me because those couple of hours were killer =( but we got food afterwards so I was happy again! Hope you had fun at your brother’s!
    And I can’t wait to try that black bean mash, I’ve been trying to come up with ways to eat them but they usually turn out really gross and tasteless. I’d love to hear any other ideas you have!
