fathers and sun (and pumpkin oatmeal)

good morning!

it’s sunday! and the sun is shining for all the lovely daddies out there! i hope each of you has a great time with your paternal parent today! even though i do have some resentment toward my dad, today i’m going to look past his flaws and appreciate him for who he is. he’s a sweet, warmhearted, smart, sensible, loving person. i’m lucky to have such a great person as my father.

not only is today father’s day, but it’s also the first day of this wonderful season we call summer. today just feels like summer, too. it must be the sun. it’s so weird to think that in only 2 months i’ll be starting college. i’m extremely nervous to leave home. i’ll still be cooking all the time, because i’m not going to be living in a dorm. i’m going to be sharing an apartment with one other girl. she’s also vegan, and loves to bake. i don’t bake very often, so that should be really fun! although, i’m already starting to feel a little bit sad, because i know that i’m going to miss my family on a daily basis! there is a huge vegan community where i’m going to college, so that part is a big plus. lots of great eats!

on the topic of great eats, this morning i had pumpkin oatmeal. i haven’t made pumpkin oatmeal in a long time, even though i’ve had a can of pumpkin in the cupboard for a while. today i put it to good use. this was a slightly sweet, slightly spicy, super splendid bowl of oatmeal.



1/2 cup oats, 1 cup water, golden raisins, shredded coconut, 1/4 cup pumpkin, 1 chopped pluot, 1/2 teaspoon vanilla extract, cinnamon, nutmeg, stevia

    Going away to college can be challenging, but you may click with a lot of people and fit right in 🙂

    omgggg pumpkin oats are my all time fav! i cant get enough of them, seriously!

    youre going to loveee college! its definitely an adjustment, but youll find yourself adapting and growing in ways you never thought possible — and then bam, it’s over! i have no doubt youll do great!
