a few pictures (but none of which include oats!)

heeeeyyyy theeeerrrreeee everyone!

i can’t wait to publish my breakfast post tomorrow morning! i have so many oaty photos to share! yay! it’s about time i devote a post to my favorite food, don’t you think? πŸ™‚

so i told you that i was going to have leftover snobby joes for lunch yesterday, but i kept the other V’CON recipe i was making a secret. i made tofu ricotta! it was fun to make because i got to squish the tofu through my fingers like a little kid playing with play-doh. and it was yuuuummy! i added a tad more salt to it, but my measuring wasn’t perfectly exact to begin with (since i halved the recipe) so maybe i didn’t put enough the first time. i also had a toasted ezekiel english muffin spread with earth balance and then sprinkled with a little bit of sea salt and black pepper. so simple. so delicious. and i’m officially obsessed with snobby joes. shelby, i think it’s going to end up being one my favorite recipes too! (well, it already is.)

i really wish that i could show you today’s breakfast but i must resist! i wouldn’t dare ruin my plan for tomorrow morning’s post after hoarding all my breakfast snapshots since monday!

today’s lunch was brown rice, steamed broccoli with a side of miso ginger wasabi dressing for dipping, and grilled teriyaki tempeh. caroline (broccoli hut) had asked me if my tempeh is already flavored. nope, it’s not. i like to just cook it in a pan on the stovetop and add whatever sauce i’m in the mood for. although, i have tried tempehtations before, which are ready to eat, and i really like those! i’ve only tried them in the bbq flavor. today’s tempeh was this.

on my way to my cousins’ house earlier (which is where i’m blogging from right now) i snacked on a few gorgeously ripe strawberries and a deliciously sweet plum. plums are such an amazing fruit. but coming from me, that’s not saying much, because i’m in love with almost ALL fruit. soΒ that’s all for now, my fellow foodies. see you (not literally, obviously) tomorrow! i’m actually really craving a bowl of oatmeal right now…

mmmmmmmmmm. juicy, juicy fruit.
