bacteria noodles

hey hey!

the “sweet cashew cream” from vegan brunch that i said i was making yesterday came out with a delicious flavor, but an odd consistency. i expected it to be more of a cream sauce, but it was very watery, and the cashews didn’t blend completely. regardless, i poured a few spoonfuls over some blueberries, freshly chopped cherries, and frozen mango. i then sprinkled some cinnamon on top, go figure. this girl loves her cinnamon! this was actually a really yummy snack. but like i said, i wanted the “cream” to be smoother and creamier. the cookbook says that it should thicken in the fridge within a few hours…but it didn’t. it also says that if refrigerated overnight, it will become a cream you need to scoop out with a spoon…but it didn’t even thicken at all. i’ve looked back at the recipe multiple times to see if there’s anything i did wrong, but there’s nothing! it’s the simplest process ever…so i don’t get it. next time i’m just going to make gena’s raw whipped cream instead.

dinner last night was a simple pasta dish. super delicious! organic whole wheat penne with tomato sauce, balsamic sauteed mushrooms, and spinach. this pasta is cool though, because it also contains jerusalem artichoke flour. jerusalem artichokes naturally contain inulin, making this pasta pre-biotic. a pasta that stimulates the growth of healthy bacteria? yes, please! serve me up a bowl! (didn’t the title of this post make you curious? haha.)

this morning i had pb & grape oat bran. i know that grapes are kind of a weird fruit to put in oats…but why not put them in?! why should grapes be any less of an oaty fruit than blueberries? i love grapies! however, i’ll admit it…this wasn’t one of the best bowl of oats i’ve had. but i think it’s pretty close to impossible for oats, fruit, and nut butter to taste bad, so i still enjoyed it.

1/2 cup oat bran, 1 cup water, cinnamon, 1 packet stevia, chopped grapes, 1 big spoonful pb

after doing a little bit of solo shopping today (do any of you like to shop on your own sometimes too?) i made an amazing lunch! i spread a whole wheat tortilla with dijon mustard, and mixed some navy beans with ginger miso wasabi dressing and some dulse. i wrapped the beans up in the tortilla along with grated zucchini, grated carrot, black olives, cherry tomatoes, and a few sprinkles of black pepper. on the side i had some leftover arame from yesterday. boy this was a yummy, yummy wrap!

    Hahha I was like…uhh…bacteria noodles?!! Say whaat?! 😛 But now I get it! That’s awesome – sign me up for some too 😉 I’ll have to look for em’…where’d ya get them?

    I def. know what you mean about having a self-shopping session…it’s relaxing and just great to spend some ‘alone’ time sometimes, ya know?

    peculiar noodle, I must admit. Did you know Jerusalem artichoke also has some unutilized potential as an ethanol fuel producer? It would be kind of funny being like, “Yeah, my rides runnin’ on some Jerusalem artichoke.” I knew it was made in beer and wine, but pasta?
    That sucks about the cashew cream. How long did they soak for and did you drain them and process them well? Whenever I use cashews they whip very nicely…

    I’ve had the same experience with my cashew cream sauce before. I ended up drizzling it over waffles instead of maple syrup, and it still tasted good!
    I am SO trying the beans+ginger miso dressing idea!

    I haven’t done it much, but I’d also probably enjoy shopping alone because I tend to take -so- long to figure out where I want to go or what to pick out. I’m not a huge clothes shopper, so I always feel pressured to hurry up by others who are with me.

    As a matter of fact, I went shopping in Vienna on my own yesterday, was pretty doable. Shopping on your own can be fun but after a while you just need other people…
    And… arame is cool! All seaweed is really, freaks people out but tastes damn good 😉

    When I made a cashew cream sauce it also came out very watery. It tasted good though, but the consistency was unexpected. Grapes are definitely not weird. They’re just pleasantly plump raisins 😀

    What brand of pasta did you use? It sounds interesting!

    Honestly, I like to go shopping by myself most of the time. But it really depends on who my shopping buddy is 😉
